Watch how it’s made
Every step in 1:10 — from the ingredients to the finished dish.
These baked egg muffins solve the problem of a rushed weekday morning without falling back on cereal or a pastry. One tray produces six portions, each with 12 grams of protein and only 3 grams of carbohydrate, and they keep for the better part of a week in the refrigerator.
The formula is simple enough to improvise with: eggs, a vegetable, a little cheese, and whatever seasoning you like. Spinach is the default here because it wilts down to almost nothing, adds iron and folate, and does not release enough water to make the muffins soggy the way tomato or courgette can.
A breakfast that starts the day flat
At 3 grams of carbohydrate, these have almost no direct effect on blood glucose, which makes them a useful option for anyone who finds their morning readings run high. Many people are more insulin resistant in the early hours than later in the day, a pattern sometimes described as the dawn phenomenon, and a low-carbohydrate breakfast is one common way of working with it rather than against it.
If you want more carbohydrate at breakfast, adding a piece of fruit or a slice of whole grain toast alongside gives you control over exactly how much, rather than having it built into the dish.
Keeping the texture right
Overbaked egg muffins turn rubbery and collapse into a dip in the middle as they cool. Pull them when the centres are just set and still slightly domed. A quarter cup of milk across six eggs is enough to soften the texture without making them watery, and it is worth cooking the onion and spinach first so their moisture leaves in the pan rather than in the tin.
Filling each cup about three quarters full leaves room for the small rise that happens in the oven.
Variations and storage
Diced bell pepper, mushrooms, broccoli florets, chopped ham, smoked salmon or sun-dried tomato all work. Cook watery vegetables like mushrooms first. For heat, a pinch of chilli flakes or a spoonful of salsa in each cup.
They keep four to five days refrigerated in an airtight container and freeze for about two months. Reheat from frozen in the microwave for around ninety seconds. They are also perfectly good cold, which is what makes them practical as a packed breakfast.
