Watch how it’s made

Every step in 1:09 — from the ingredients to the finished dish.

Carrot cake is mostly sugar, flour and cream cheese frosting. What makes it taste like carrot cake, though, is none of those: it is grated carrot, cinnamon, nutmeg and walnuts. Separate the flavour from the dessert and you can put it in a jar of overnight oats without the 60 grams of carbohydrate a slice would cost you.

Grated carrot is the interesting part. Half a cup adds real bulk, sweetness and 2 grams of fiber for about 6 grams of carbohydrate, which is a better trade than almost any fruit gives you.

Grate it fine, and grate it fresh

Carrot grated on the coarse side of a box grater stays crunchy overnight and reads as raw vegetable in a sweet jar, which is not the effect you want. The fine side softens properly and disappears into the texture.

Pre-shredded bagged carrot is cut too thick for this and is usually drier. It is the one shortcut that noticeably costs you here.

Why carrots are sweeter than people expect

Carrots have a reputation as a high sugar vegetable that does not survive contact with the numbers. A medium carrot carries about 6 grams of carbohydrate, most of it accompanied by fiber, and the glycemic load of a normal portion is low.

The reputation comes from cooked carrot, which does test higher than raw, and from the fact that they taste sweet. Raw and grated, as they are here, they are among the more useful vegetables you can put in a breakfast.

Standing in for the frosting

The cream cheese layer is what most people miss. Greek yogurt whipped with a little vanilla gets remarkably close in both tang and texture, and brings 18 grams of protein to the jar instead of sugar and fat.

If you want it closer still, beat a tablespoon of light cream cheese into the yogurt. It adds about 20 calories per jar and the difference in flavour is real.

The spices are not optional

Cinnamon and nutmeg together are what makes this read as carrot cake rather than as oats with a vegetable in them. Use both. A pinch of ground ginger sharpens it further if you have it.

Stir the spice into the liquid rather than over the top, and give it the full night. Ground spice in a cold mixture needs hours, not minutes.

Walnuts, and a note on raisins

Walnuts belong. Two tablespoons per batch add crunch and fat, and fat is part of why this holds you through the morning.

Raisins are traditional and we have left them out on purpose. A quarter cup would add roughly 30 grams of carbohydrate to the batch with very little fiber, which is most of the reason carrot cake is carrot cake. If you want them, use a tablespoon and count it.

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup carrot, finely grated
  • 2 tbsp chia seeds
  • 3/4 cup unsweetened almond milk
  • 3/4 cup plain Greek yogurt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp walnuts, chopped
  • Stevia or monk fruit to taste (optional)

Instructions

  1. Grate the carrot on the fine side of a box grater.
  2. Combine the oats, chia, cinnamon, nutmeg and almond milk in a bowl and stir until no dry oats remain.
  3. Stir through the grated carrot and half the vanilla, then divide between two jars.
  4. Whip the Greek yogurt with the remaining vanilla and sweetener, and spoon it over each jar as a top layer.
  5. Cover and refrigerate overnight, at least six hours.
  6. Scatter the walnuts over just before eating so they stay crunchy.

Tips

Keep the walnuts in a separate small container rather than adding them at the start. Nuts left in a wet jar overnight go soft and leathery, and the crunch against the soft oats is half of why this works.

Frequently Asked Questions

Not if you grate them finely. Overnight in the liquid they soften completely and read as sweetness and body rather than as vegetable.

No. A medium carrot has about 6 grams of carbohydrate with fiber alongside, and a normal portion has a low glycemic load. The reputation is not supported by the numbers.

A tablespoon, if you count it. A quarter cup would add roughly 30 grams of carbohydrate to the batch, which changes the recipe entirely.

Three days refrigerated. The carrot releases water slowly, so by day four it is noticeably looser.
