Eggs spent thirty years being treated as something to ration, and the advice has moved on. The 2015 US Dietary Guidelines removed the specific daily cholesterol limit, because the evidence that dietary cholesterol drives blood cholesterol in most people turned out to be weaker than assumed.
The picture for diabetes specifically is less settled, and it is worth being straight about that rather than declaring the question closed. What is not in dispute is that an egg carries 6 grams of high-quality protein for under a gram of carbohydrate.
What the guidance actually says now
Current dietary guidance treats eggs as part of a healthy eating pattern rather than something to limit by number. Some observational studies in people with diabetes have found associations with higher intake, and the findings are inconsistent.
The practical position most dietitians take is that eggs are fine in the context of an otherwise good diet, and that what accompanies them usually matters more than the egg. This snack is eggs with vegetables; the version that concerns anyone is eggs with bacon, sausage and buttered white toast.

How to boil them so they peel
Lower them into water that is already boiling rather than starting them cold. The sudden heat sets the outer white against the shell membrane and the shell comes away in large pieces.
Ten minutes for a firm yolk, then straight into ice water for five. The cold shock contracts the egg slightly away from the shell and stops the yolk developing the grey ring.
Older eggs peel more easily than very fresh ones. It is one of the few times the older carton is the better choice.
Yogurt instead of mayonnaise
The eggs already bring fat with them, which is why egg salad made entirely with mayonnaise is so rich. Greek yogurt with a teaspoon of Dijon keeps the creaminess and adds protein.
A single teaspoon of mayonnaise stirred in alongside gets you the flavour people are looking for at a cost of about 4 grams of fat across the whole batch.
Bell peppers rather than bread
Quartered lengthways, a bell pepper makes a natural boat with a curve that holds filling. Two slices of bread carry around 30 grams of carbohydrate; the peppers carry 6 for the whole snack, and bring vitamin C and fiber with it.
Red peppers are sweeter and more expensive; green are sharper and cheaper. Both work and a mix looks better.
Chop the eggs, do not mash them
Roughly chopped, you get distinct pieces of white and yolk and a texture worth eating. Mashed with a fork it becomes a paste.
Fold the dressing through gently at the end rather than mixing hard.
