Watch how it’s made
Every step in 1:15 — from the ingredients to the finished dish.
Meatballs almost always contain breadcrumbs. They are there as a binder and as a way of keeping the mixture tender, and in a standard recipe they add around 15 to 20 grams of carbohydrate to a batch.
Ground almonds do the same two jobs. They absorb moisture, they keep the texture soft, and they bring roughly 2 grams of carbohydrate instead of 20 along with fat and fiber. That single swap is what puts this dinner at 16 grams a serving.
Why ground turkey needs help
Ground turkey breast is very lean, and lean meat makes dry meatballs. There is nothing in it to keep the inside moist through fifteen minutes in a hot oven.
Three things fix that here. The ground almonds hold moisture, the egg binds without drying, and a grated onion releases liquid into the mixture as it cooks.
Grate the onion rather than chopping it. Chopped onion stays as pieces and makes the meatballs fall apart; grated, it disappears and gives up its water where you want it.
Do not overwork the mixture
Mix until the ingredients are just combined and stop. Ground meat worked hard develops a springy, sausage-like texture, and once it has gone that way nothing brings it back.
Wet your hands before rolling. The mixture is sticky by design and damp hands are the difference between neat meatballs and a mess.
Everything on one tray, in the right order
Bell peppers, red onion and broccoli all take about twenty minutes at 425F. The meatballs take fifteen. Give the vegetables five minutes alone, then add the meatballs and finish together.
Space matters. Meatballs touching each other steam rather than brown, and the browned surface is where the flavour is.
Checking they are done
Poultry needs 165F in the centre, and with meatballs this is not a place to guess. A thermometer into the middle of the largest one is the only reliable check.
They will still be juicy at 165F if the mixture was right. Dry meatballs are almost always a binder problem rather than an overcooking problem.
They freeze properly
This is one of the better things here to make in double quantity. Cooked meatballs freeze on a tray and then bag up, and reheat from frozen in about ten minutes.
The vegetables do not freeze well. Roast those fresh.
