Watch how it’s made
Every step in 1:12 — from the ingredients to the finished dish.
Hummus gets all the attention among bean dips, and white beans make a better one. Cannellini are creamier than chickpeas, they blend completely smooth without any grittiness, and their flavour is mild enough to let herbs and lemon come through instead of competing with tahini.
They are also cheaper, and a tin blends in two minutes with no peeling, no soaking and no ice water trick.
Why beans make a good snack specifically
Snacking is where blood glucose management usually comes apart, because most things designed to be eaten between meals are fast carbohydrate with nothing to slow them down.
A bean dip is the opposite. The carbohydrate arrives with fiber and protein attached, and beans consistently produce one of the flattest glucose responses of any starchy food.
The trick for a smooth dip
Blend the liquids and aromatics first, before the beans go anywhere near the machine. Lemon juice, olive oil and garlic whizzed together create an emulsion that the beans then break down into.
Beans blended dry just climb the sides of the bowl and sit there while the blades spin underneath. Most gritty bean dips are this problem, not a problem with the beans.
Then let it run longer than feels necessary. A full two minutes, scraping down twice.
Fresh herbs, this time
Unlike the ranch dip, this one wants fresh. Parsley, basil and dill all work, and they go in at the end for the last twenty seconds so they stay bright green rather than turning khaki.
Blend them too long and the dip turns a murky olive colour. Twenty seconds is enough to distribute them.
Roasted red peppers, jarred or your own
Jarred roasted peppers are one of the genuinely good convenience products. Drain them well and pat them dry, because the brine will thin the dip and make it taste of vinegar.
If you roast your own, char them under a hot grill until blackened, then steam them in a covered bowl for ten minutes. The skins slip off with your fingers.
How to serve it without undoing it
Pepper strips, cucumber rounds, celery and endive leaves are all under 5 grams of carbohydrate a cup.
Pita bread is what this normally comes with, and half a large pita is around 20 grams. That is not forbidden, but it more than doubles the carbohydrate of the snack, so it is worth being a decision rather than a habit.
